1-2-3 Ribs

How to make the best ribs EVER with little to no effort? Whaaaat??? Is that even possible??? YES it is!!! And the answer is your crockpot! I’ve been making them like this for years and they never fail to disappoint (or be “fall off the bone” tender, savoury, sticky deliciousness!!!) Seriously, this is the recipe you need to try for this grilling and bbq season! Because, yes, they also get grilled for a couple of minutes on the bbq for that smokiness we are looking for in a delicious rack of ribs.

The only hard part about making these ribs is waiting to eat them as they slow cook in the crockpot all day while amazing smells waft from your kitchen… this gets everyone hovering over the crockpot a few times wondering if they’re ready yet, lol.

So apart from the crockpot, the secret to making these the most delicious ribs you’ve ever made is… you ready for this? Beer! After putting the ribs in the crockpot you pour a beer over them (sometimes i’ll choose a beer that is light in flavour other times I’ll choose something that will impart a certain flavour to the ribs… maybe with caramel undertones, a dark beer maybe.) Today it ended up being a Chipie from the Archibald Brasserie. Then a small drizzle of maple syrup. I live in the land of maple syrup, Québec/Canada and love to use local ingredients, but seriously you don’t need to add syrup if you don’t want to. You aren’t putting so much that it makes the ribs sweet, it’s more like an underlying flavour, or flavour enhancer. You then add a couple of cloves of garlic, roughly chopped. Then grind some pepper generously onto the ribs. Cover and cook on low for 8 hours.

Once the house smells amazing and the neighbours are peering into the windows wondering what you are making for dinner, you slather some bbq sauce on the ribs (homemade, store bought, you choose!) then transport them to the bbq (broiler in the oven works too!) and grill them just a couple of minutes until the sauce sticks to them and you’ve got a bit of a smoky smell now to your ribs. And that’s it!!!

Now watch them disappear!!! These are guaranteed to make you the biggest hit at your next cookout/picnic/bbq party!!! You’re welcome 😉

This is what you’ll need:

  • a couple of racks of ribs
  • a beer (I live in Québec so I like to use something local like Chipie which is a pale ale beer with a bit of depth to it)
  • maple syrup, just a drizzle will do
  • 2 cloves of garlic
  • pepper
  • bbq sauce (homemade or store bought)
